The Hove Deep Sea Angling Club got in touch with us to help arrange their celebrations – with 300 guests expected.
With permission to set up a huge marquee on the esplanade outside the club it was the perfect location, right on the beach. What we didn’t factor in were the gale force winds!
Final numbers came down to 200 and there was plenty of room in the marquee for the band to set up and buffet tables at each end. As they wanted to get on with the evening’s entertainment a cold fork buffet was the way to go, so we could get everyone fed quickly and efficiently.
This was their menu:
Cold Roast Meat Platter
Topside of Beef, Baked Ham and Turkey Breast
Asparagus & Parmesan
Sun-dried Tomato & Red Pepper
Poached Salmon Platter
Poached Salmon served with a Cucumber Creme Fraiche
Sliced Tomato, Mozzarella and Red Onion Salad
Served with a balsamic dressing
New Potato Salad
with Diced Gherkins in a Mustard Mayonnaise
Green Fig’s House Salad
Blanched asparagus, green beans, sugar snaps and mange tout tossed in a chilli and soy dressing finished with toasted sesame seeds
Sun-blushed Tomato and Black Olive Orzo Salad
Finished with Parmesan shavings
Platters of Chocolate Brownies with Fresh Strawberries
Zesty Lemon Pots with Fresh Raspberries

Feeding this amount of people in a short space of time is all about the pre-organisation. Fortunately it was a well-oiled operation and everyone not only loved the food, but had time to come up for seconds.
With the buffet cleared we could carry on our work behind the scenes and let them get on with the evening.
