We had the privilege of cooking for the relatives of the owners of Gildredge Manor for a celebration lunch. A beautiful venue and idyllic setting for a family get together.

The group consisted of 55 people and they dined in the upstairs room called The Long Room. Pauline and Alan selected simple but varied menu for their guests so that everyone could pre-order something they like.

Starters consisted of a Homemade Broccoli and Stilton Soup, Fan of Melon and Exotic Fruits with a Red Fruit Coulis, and the old favourite Prawn Cocktail – which seems to have had a come back. We like to add a dash of Vanilla to our Marie Rose Sauce (a little trick we nicked off of Gordon Ramsay) as it adds an interesting and velvety feel to it.

For mains the guests enjoyed Roast Beef, Bacon Wrapped Chicken Breast, Poached Salmon Fillet with a Watercress Sauce and Mediterranean Roast Vegetable Lasagne – all served with Seasonal Vegetables and Potatoes.

Desserts included Rhubarb and Almond Crumble, Zesty Lemon Pots, Rich Chocolate and Coffee Pots and a Selection of Cheese with Fig and Biscuits.

The guests had a fabulous day, and it was a real pleasure for us to cater for such a lovely group of people.
