Spring’s properly landed here in East Sussex, nearly into summer – the hedgerows are really greening up, the days are getting longer and our cravings are shifting from stews and roasts to lighter bites and fresh, zingy plates. That means it’s time for a bit of a shake-up in the kitchen, and our seasonal catering menus are proving popular.
This is one of our favourite times of year for cooking. The markets are full of good stuff – purple sprouting broccoli, watercress, new season rhubarb, spinach, wild garlic and the first bunches of British asparagus. Everything just feels fresher and a bit more alive, which makes for lovely, vibrant food, perfect for sharing with a crowd.

Starters With A Spring In Their Step
First up, our beetroot and goat’s cheese salad. This has become a bit of a seasonal favourite and they’re a proper crowd-pleaser. Earthy, juicy and delicious. It’s perfect for grazing tables or a relaxed sit-down do, no matter the occasion.
Also back in the line-up: Wild Mushroom Bruschetta with a sprinkle of thyme and a drizzle of olive oil on toasted ciabatta. Rich, earthy and just fancy enough to impress, but still totally comforting.
Mains That Celebrate The Season
Our mains are all about balance – fresh, filling and full of flavour.
The Butternut Squash, Chickpea & Spinach Curry served in a crisp filo basket ticks a lot of boxes. It’s warm and gently spiced, totally plant-based, and great for mixed dietary needs. The filo adds a lovely bit of crunch and it looks brilliant on a plate.
On the lighter side, our Oven Roasted Salmon with Salsa Verde is bright, herby and ideal for this time of year. Served with crushed new potatoes and a generous spoonful of salsa verde made with lemon, parsley, capers and good olive oil, it’s one of those dishes where the ingredients do all the talking.
Sweet Treats To Finish Things Off
Dessert-wise, we’re going for light and fruity, with a few indulgent touches.
Our Summer Berry Pavlova is always a hit. It’s colourful, refreshing and naturally sweet. You really can’t go wrong.
Then there’s our Lemon Posset Pots – smooth, citrusy and served in adorable little pots. They’ve got just the right amount of zing and always feel like a proper spring/summer pudding. We get asked for the recipe all the time!
Afternoon Tea
If you’re leaning towards something a bit more relaxed, our Afternoon Tea is still going strong, and it’s a lovely option for summery birthdays, garden parties or smaller weddings. We keep it classic with a spread that includes finger sandwiches, homemade sausage rolls, cheesy biscuits, mini sponge cakes, scones with jam and cream, and of course, our famous chocolate brownies. It works beautifully as a proper sit-down tea, but it’s just as good as part of a help-yourself buffet spread.
